New York Style Cheesecake with a Twist!



 Sometimes I get a craving I can't ignore.  This happened to me a couple of weekends ago, and I couldn't control myself, I needed some cheesecake. After a long time of contemplating whether I could be bothered to go to the store to get all the ingredients, I gave in, knowing that if I didn't I would regret it for years(I may be exaggerating). Lets just say that I really really REALLY made the right choice. I somehow created perfection, and so I have to share it with everyone! I hope you love this as much as I did!




Rose Scented New York Style Cheesecake with a Lychee-Passionfruit Compote and Fresh Raspberries, Adapted from Bon Appetit Desserts: The Cookbook for All Things Sweet and Wonderful, Pg. 172


Ingredients




For the crust


9 whole graham crackers or 10 digestive biscuits, broken into pieces
5 tablespoons chilled unsalted butter, 
3 tablespoons granulated sugar




For the rose scented cheesecake filling


Five 8-ounce packages cream cheese, at room temperature
1 1/2 cups granulated sugar
4 large eggs
1 large egg yolk
2 tablespoons rosewater
1 1/2 teaspoons vanilla extract
Pinch of salt
2 tablespoons unbleached all-purpose flour


For the topping


1 can Lychees in light syrup, liquid reserved
2 passion fruits
300g raspberries


Directions


Make the crust


1. Preheat the oven to 325°F (163°C).


2. Grind the biscuits or crackers to coarse crumbs in a food processor or with a rolling pin and a resealable plastic bag. Add the butter and sugar and process or stir until the crumb mixture is well blended and begins to stick together.


3. Press the crumb mixture onto the bottom (but not the sides) of a 9-inch-diameter springform pan with 2 3/4-inch-high sides. Bake the crust until golden and firm to touch, about 25 minutes. Cool the crust in the pan on the rack. Keep the oven at 325°F (163°C).


Make the cheesecake filling


4. While the crust bakes, beat the cream cheese in a large bowl with an electric mixer on medium-high speed until fluffy. Gradually add the sugar and beat until blended.


5. Beat in the eggs, one at a time, mixing just until just blended after each addition. Then add the egg yolk, scraping down sides of bowl. Beat in the rosewaer, vanilla, and salt. Sift the flour over the filling and beat on low speed just until blended. Scrape the filling over the cooled crumb crust.


6. Place the foil-wrapped cake pan in a large roasting pan. Place the roasting pan on the oven rack, pulling the rack out slightly. Carefully add enough hot water to the roasting pan to come halfway up the sides of the cake pan. Bake the cheesecake in the water bath, rotating the pan once halfway through, until the center is softly set, about 1 hour and 15 minutes. Remove the roasting pan from the oven.


7. Let the cake pan stand in the water bath for 5 minutes. Remove the cake pan from the water bath and transfer it to a wire rack. Using a sharp, slender knife, work around the sides of the pan to loosen the cake. Cool completely at room temperature. Cover and—here’s the hard part—refrigerate overnight or for up to 2 days prior to slicing.


Make the compote


8. Place all the contents of a can of lychee in a small saucepan. Simmer at a medium-low heat for 5 minutes. Cut the passion fruit open and scrape out the filling into the saucepan. Keep simmering until the mixture has thickened significantly. Place in the fridge until chilled.


9. Once the cheesecake and compote have been chilled, cut the raspberries in half, and place on the cheesecake, cut half down. Spoon the compote on top and spread. Put back in fridge until ready to serve (if you aren't just going to eat it all right away!)

Alright, I have to admit something. This post should really be in with the Museum of London post, but for some reason it was left out, so I'll use it today! I hope these cakes aren't real, because I can only imagine how long they've been on display, but they look yummy, right? My idea is that I should find a way to make these cute petit fours, but in a way that they're actually good for me. 
I would love some feedback, so let me know in the comments, on twitter or facebook what you think of this! Should I try to replicate them but in a health conscious way? Or should I indulge and make them full fat?

Meet Basil (pronounced BAH-zil). He's my new basil plant. I love him very much, and I'm going to take care of him for as long as possible. He loves water and being near the open windows on a warm day. Matt and I adopted him yesterday from a shelter, so now he's in a loving home and he'll never be alone. Isn't he photogenic?

"Mac" and Cheese... and Kale?

I'd like to start off today by asking you all to look up a couple of inches to the Pages bar. I have painstakingly made social media pages (hey, twitter is hard to understand) to help keep everyone up-to-date about my new posts etc! And just for the heck of it, now they're linked in the last sentence! Now that I'm done shamelessly plugging myself, I'll get back to the point, and what you're all here for, THE FOOD!


So today I was looking for inspiration for something that I could easily make myself for lunch, and I was drawing blanks. England doesn't have any of my regular go-tos! (I never thought I would miss the cuisine of gatineau-ottawa) Suddenly I remembered a hazy memory that I have of... Kraft Dinner? I don't care what other people think, I really enjoy it when I'm looking for something fast and easy. Of course they don't offer it here, so I was back to square one. 


I didn't have any macaroni,  but I had my whole wheat pasta from the Avocado Pasta adventure, so I was determined to figure out some delicious dish to put that in!


Last time I went to the grocery store, I bought so much Kale that I think I might drown in it. I've had it for every meal since Monday at Lunch, and I'm still not finished it! So that was another ingredient to use.


Looking through the pantry I found red onions, and a little bit further on I got to my arugula. My brain started to tick so I looked in the fridge and found that Matt bought a HUGE brick of Cheese then went off on a business trip to Scotland. Bells started to go off, so I decided to use a little trick to fool myself into not realising I was eating Kale (again!) So, I started making my cheese sauce.
 
Recipe: 


1 part Butter
1 part Flour
2 parts Milk
Onion, chopped or sliced
Kale, Arugula, Spinach etc. Roughly Chopped
Garlic, to taste
Cheese*


Melt the butter on medium-low heat.
Add the chopped onions and cook until soft.
Add in the Leafy greens and garlic. I used quite a bit of greens because they tend to cook down
Once the greens are soft, add the flour and stir until thoroughly mixed
Add the milk and bring it to the point where it is almost boiling and stir until the Butter, Flour and Milk are homogeneous.
Add in the Cheese and keep stirring, making sure not to let it burn to the bottom, until everything is melted properly.
Pour over pasta and enjoy!


Depending on the cheese you may also like it with (mom, stop reading!) Ketchup.


* Note on the cheese. The general rule is that the cheese will keep its taste, but loose a bit of intensity. You can change this by either adding in extraordinary amounts or by going up a maturity level. I however don't recommend going up all the way to extra mature if all you like is mild. Keep it within one or two years. Also, experiment! I used Extra Mature and Lancashire, but stuff like Pepperjack, Gouda, Edam, Swiss etc. would do the trick!

Many days, I have looked outside with the hopes that I will see the sun, but does it always appear? No.


While the newspaper may come out, the pun is ruined by the overcast skies. It doesn't help that this is on the same street corner 3 times on my way to the gym. Oh Britain.

My first real foray into the "green" smoothie!

Alright, well first of all, the smoothie didn't turn out green, but I'll explain to you later why I called it that.
My sister was the inspiration for today's recipe. This weekend she suggested that I try making some sort of smoothie to help with my exercise, and to make a new post! So I listened to her! Right now I'm going to go a bit off track though to advertise for an event that she's helping organise. The proceeds go to a very good charity, and for anyone in the Ottawa area, this is a must! You can find details here, as well as in the poster below. (She doesn't know that I'm doing this so she'll hopefully be alright with it!)


So, back to the subject of the post. The smoothie!

Today's picture of the day has something that is very close to my heart as it's subject. It is sometimes irritating, but they, this is what i signed up for!

The Full English Breakfast

If there's one thing that the British know, is how to stuff their citizens on the weekends. From the gorgeous Sunday "Lunch" that Matt's Dad and girlfriend made us last weekend (it was more of a feast) to their legendary weekend breakfasts, these people know how to eat.


Last night we were watching this show called Everyday Breakfast, and they were finding ways to recreate the British view on breakfast. That's where my inspiration stemmed from this morning, except I didn't want to recreate it, I wanted to make it as it should be.

Picture of the Day! March 3rd, 2012

Today's picture of the day is just a little something that Matt and I found one day. Nestled behind Waitrose and my gym is this cute public restroom turned flower shop. 

Something about it just made me love it. It was little and random, and of course had a ton of flowers around it, but the thing that really hit me was all the union jacks. The banner, the door mats, etc. So cute!

New direction?

My search for a job in London has so far been fruitless, so to keep my spirits high, I'm going to take something else into my hands.



Since I've been here, I've gained weight because food is always readily available (when I was at school I would frequently forget to eat, not have time between classes etc.), so what I'm going to do is force myself to be healthy. Relatively simple, right? 

Well, I live with two guys who are currently out to get a bucket of KFC to share amongst themselves. I am partial to sweets here and there as well, but I think I may have a way to trick myself into thinking that my healthy food is deliciously bad for myself.

I was skyping my family this morning, as I do every Saturday morning, and my sister was over at my parents' place. At one point, she just popped into the screen and suggested I try making a smoothie for after my workouts instead of eating a whole meal of potential crap.

This definitely appealed to me. Smoothies can be so yummy if you get the right combination of fruits. Eventually my mind started going, and I thought of something I had seen a while back on another blog; something about a green smoothie.

Today's Picture of the Day didn't quite make it into the story of the Borough Market, but I still think it's worthy of being seen, so enjoy!

Borough Market

So really gorgeous weather hit London last Thursday; I could hear screams of joy coming from every corner of the city! Because of this, Matt and I made tentative - and extremely risky - plans to visit Borough Market the next day when he was finished work.


Friday came, and the weather was still the same; sunny and warm! Matt got home, and we decided to get going. Our main objective of the afternoon was to find Cheese Curds.


While we didn't manage to find any, the day was still a win because we found something I never imagined I would find during my time in London, but that comes later.


We started planning our outing, but to get from home to the market quickly is fairly impossible. It's either 30 minutes by tube, 33 by bus or 35 walking. I get cooped up at home all day, so I got Matt up off his butt and got him to agree to walk!
