Last night we were watching this show called Everyday Breakfast, and they were finding ways to recreate the British view on breakfast. That's where my inspiration stemmed from this morning, except I didn't want to recreate it, I wanted to make it as it should be.
So, I got out the basics
Eggs, Bacon, Sausage, Mushrooms, Tomato, Toast, etc.
Lets just say that my breakfast was at 1pm, but it was damn delicious.
To be honest though, I made Matt make his own bacon and sausage, but I'm pretty sure he would prefer it that way... Apparently I "don't know how to cook meat". Silly boys!
So this is how I made my English Breakfast on a rainy Sunday "morning".
The first thing I did was cooking down some onions. They're good in everything! I put in about 2 tsp of butter to help cook it.
Yum, right? While those were starting to soften, I threw on my veg sausages and the eggs for both of our meals.
Now it started to get intense. As everything was cooking, I started to have to juggle all the pots and pans I had! 

As you can see, I threw in the mushrooms, without adding any extra butter, because if you heat them they'll secrete their own juices and they really don't need the extra fat.
When the mushrooms we're a minute or two away from being perfection, I threw in some arugula/ rocket for good measure. I try to get in as many leafy greens as I can into our diets, much to Matt's complaints! Apparently this was one change to his breakfast that he wasn't too keen on, but the way I see it is that if he wants something different, he can make it himself! At the last minute I remembered that we had some tomatoes, so i grilled them up for a minute on a non-stick pan, truly the British way to do it.
I don't know how Matt feels, but my breakfast was divine. This is for monthly or bimonthly meal, because it was so huge! There's no way you could eat this every day, but man, its yummy.
